A Day at the Zoo

A couple weekends ago, I officially opened HOTEL del PRO. In other words, I hosted my mom, my grandma, my ten year old sister and Lilly, a dog my mom was sitting for a week or so.

I live in a two-bedroom apartment. It wasn’t an impossible feat, by any means. But it was, however, a challenge. Now, don’t get me wrong. I LOVE my family and I’m so happy they decided to come visit. I took the couch, my Gram got my bed, mom took the futon while Evan rocked the floor. Everyone seemed pretty content with the sleeping situation. All in all, I’d say it was a success.

While they were down here, we all decided to go to the Cheyenne Mountain Zoo. It’s new to me and my little sister is an animal-lover to the max. I thought this was a pretty grand idea.

Perks of the zoo: ice cream (for nostalgic purposes) and the giraffes.

Here are a few of my FAVORITE pics from the day:

and last but not least…the wildest animal of them all.

So very happy we went.

Much love,

So…it’s been a while.

Right. Almost a month since I last posted. Whoops.

The truth is that I’ve just been busy! Which is a good thing. I’ve made some really fantastic friends here in The Springs. Tonight is my first night to be home. By myself. For more than an hour…in over a week. It’s been insane!

Don’t get me wrong – I’m lovin it! I’ve been playing softball and sand volleyball and going out for drinks; Jacques and I even went to our first Rockies game of the season last Saturday! I’m enjoying the HELL out of this summer.

Since the last time I posted, Jacques participated in a bike race. It was the Firecracker 50 up in Breckenridge, CO on the 4th of July. It was a 50 mile race and my guy did really well. He placed 6th in his age group and I’m so proud of him! He has another one coming up this weekend (which I won’t be attending) which is the Breck 100 (a 100 mile race) and I know he’s going to KILL IT!

I won’t be attending this race because my mom is coming down for the weekend…with my sister…and my grandma…and some dog that she’s watching for the next week. My apartment will soon become Pro’s Hotel! Eek! I’m really excited to see everyone and we’re thinking about going to the Cheyenne Mountain Zoo. I haven’t been yet and nearly everyone speaks highly of it so hey, why not?! Should be a good time.

Work is still going really well. We start certification next week and I’m really nervous. So far I’m doing really well so we’ll see if we can keep that going! I’m still liking my job and LOVING the company so no complaints here! I also really love the people I work with – we’re a crazy (and super eclectic group) which amazingly, works really well for us. Honestly, some great new people that I’m sure you’ll hear more about.

There’s really nothing else to say…except that I need to get back into the swing of posting more often!

Much love, Pro

You Know You’ve Lost Weight When…

…even the most stretchy workout pants don’t fit anymore!

That’s right ladies and gents – I was forced to “treat” myself (I know, rough life, eh?) to a whole new workout wardrobe today because my workout pants are officially falling off of me (eeek! No one wants to see that…). I was at soccer practice with my little sister on Monday and, as with most practices, I was running sprints with the team and having to HOLD MY PANTS UP as I ran. The same thing happens when I scrimmage with the girls or even work it out really hard on the elliptical.

Now, workout garb is EXPENSIVE so I’ve been putting this off for as long as I could. After Monday though, I figured that now is the time. I spent about $60 on 3 pairs of workout pants that should last me the next few months, at least, depending of course on how my weight loss continues to go.

For you thrifty shoppers, yes I probably could have gotten them cheaper (for less money) but they would have also BEEN cheaper (lesser quality). These are pants that I wear 5-6 days a week to workout in, and sometimes just for the heck of it simply because they’re comfy. I want them to last me a while so I decided to splurge. Plus, they made my tush look pretty sweet – how could I argue with THAT?! lol

I’ve also had my eye on this adorable pea-coat at Old Navy for the past couple weeks:

Old Navy Coat

…and it was on sale for $80 (it might be $90 now) but I just couldn’t bring myself to do it – just yet. I tried it on and I really liked the way it looked but can I really justify purchasing this $90 coat when it might not (fingers crossed) even fit me next winter? On one hand, it would be really nice to “reward” myself with some birthday money from grandma for all my hard work this summer. The nice wool coat I bought and wore last winter still fits but it’s a little bit big and may look frumpy. On the other hand, wouldn’t it be worth it though, to just make that one LAST for this winter and then really be able to buy a **SUPER CUTE** coat NEXT winter since I’ll be at my goal weight? That’s what I’m thinking…but THIS one is HERE, NOW. I need to chill out with this “instant gratification” mindset.

In other COAT news (not that many of you care but I’m super excited about it), the REALLY nice winter jacket that I bought myself 4 years ago FITS AGAIN! Yay! It’s one of those ski jackets that has the outer shell and then the inner down-filled liner that zips in. I love this thing…it’s tan and pink (PINK!) and I haven’t been able to wear it for the past 2 (maybe even 3) winters because well, it didn’t fit. I tried it on this past weekend and VOILA! it fits beautifully. I am ecstatic. Maybe I can just *pretend* that it’s new and hopefully that will take my mind off the Old Navy coat?

Weigh in is tomorrow – I’m switchin’ to Fridays – and I’m really hoping that I see a loss on the scale. MY scale is saying that I’ve lost about a pound and a half and I still have one more trip to the gym tonight (second of the day). Dinner will be a small baked potato with a boca burger, green beans and lots of water. Ooooh! and my new favorite snack? Wheat Thins Fiber Selects – Garden Vegetable:

Wheat Thins–> 120 cals, 4g of fat and 5g of fiber – these are only 2 points per serving. The best part? One serving is 15 crackers! They’re delicious and filling so it’s a great little snack in the middle of the day and BONUS! it doesn’t taste like cardboard as many fiber-filled foods often do. They’d be scrumptious with hummus (yum). Enjoy…you can thank me later :)

A Meal Fit For a King

Yesterday was my grandfather’s 82nd birthday so my mom invited him, my grandma and Erik’s sister Karen over for dinner. As was expected my mom prepared an absolute feast! It was all delicious – and I’m sure it was calorie-free (yeah right). While His Highness declined photography, I did manage to take some pretty sweet pics of the food…a food photo documentary, if you will.

DSCN1548Phyllo dough pizza with fresh-from-the-garden tomatoes

DSCN1551Prosciutto-wrapped gnocchi with a tomato garlic herb dipping sauce

…there was also some grilled zucchini and chicken that I forgot to take pics of – but they were also delicious – take my word for it :)

And lastly…

DSCN1546I was in charge of dessert – double layer chocolate cake with vanilla cream cheese scrolls (I did that! I KNOW, right?)

Anyway…dinner was scrumptious and I think my grandpa enjoyed himself thoroughly. Not quite WW friendly, but for special occasions I think it’s okay to indulge. THIS was one such occasion.
